Without Bermar’s preservation system, Oeno House wouldn’t be able to offer as many wines as we do now, especially sparkling wines, because the wastage would become too huge. The ability to even offer such beautiful Champagnes by the glass is thanks to Bermar. If we open [a bottle] and only serve two glasses, we know that we can seal & preserve it before serving again, which helps us significantly manage our wine wastage. We introduced the Bermar preservation system in order to help us grow our wine sales and minimise our wastage, it absolutely makes financial sense but more importantly for me as a manager it gives me the peace of mind that all our wines by the glass are served in perfect condition and tasting as well as they could possibly taste. This system and reassurance means that we have expanded our range of wines by the glass and we're able to push for more exotic and interesting wines which means that our clientele keep coming back to us and our list doesn't get stale. We currently sit 4.5% above our sister bars for wine sales and way ahead of our target sales for wine.
